    Fettuccini Alfredo with Chicken

As a kid, fettucini alfredo was maybe my absolute favorite…it was like mac n’ cheese but…sophisticated.  And as you’ll see in this recipe video, my enthusiasm hasn’t diminished over the years.  Fettucini alfredo is one of my go-to dishes when I’m at an Italian restaurant, and I think my version as just as good.  Many people think

    Spaghetti Pesto with Chicken

I discovered pesto fairly late in life, and it’s a shame I missed out on years of deliciousness.  In this recipe video, I make a spaghetti pesto with chicken that is both tasty and pretty easy to make.  Pestos are traditionally made with basil, garlic, pine nuts, and parmesan cheese.  In this version, I change it up a bit because I didn’t have pine nuts; I had almonds.  But in the spirit of No

Polenta is one of my favorite side dishes, and far more simple than a lot of people think.  In this recipe video, I make a simple and tasty polenta that would go great as a side dish for roast chicken, braised dishes like oso bucco, or simple classic dishes like chicken piccata.

    Macaroni and Cheese

Macaroni and cheese is one of the great American comfort foods. I think every kid around loves it, and most adults do too. But I rarely see friends make it at home. That’s a shame, because it’s really pretty easy to make. In this recipe video, I make a classic mac n' cheese, or at least what I consider classic

Ravioli with Chicken and Sundried Tomato

With the right cooking techniques you can take simple, store bought ingredients and quickly turn them into something special.  Using prepackaged food is easy and can save you a lot of time.  In this recipe video, I do just that with some cheese ravioli, a left-over chicken breast and a jar of sundried tomatoes.

    Spaghetti and Meatballs

Spaghetti and Meatballs is an Italian American classic, and I probably don't need to extol its virtues - but I will just a bit. When it comes to comfort food, spaghetti and meatballs has got to be near the top of the list. For me, it brings me simultaneously to my mother’s kitchen table, to the tiny little Italian restaurant I used to go to in college, and even to some of the fine dining restaurants I’ve been too over the years.

    Pasta Carbonara

I'm not sure if pasta carbonara falls just above or just below fettuccini alfredo on the "not great for you" scale, but I do know that it's delicious - and a little goes a long way, so you don't have to feel too guilty.  This dish has the perfect combination of salty and sweet, creaminess from eggs, and good texture from the pasta and bacon.  In this recipe video, I show you how to make a pasta

    Italian Meatballs

There must be as many Italian meatball recipes as there are Italians.  So by no means am I going to say my meatballs are “the best” – especially since I don’t have any Italian in my blood.  However, I do think that I’ve got a great tasting version that is pretty simple to make.  Feel free to add your own ingredients and techniques, but this recipe should give you a great place to start.  FYI –

How to Roll Out Pasta Dough

Once you have a pasta dough made, your next step is to roll it out into sheets, from which you can easily make long pastas, like spaghetti and linguini, or cut rounds for raviolis or other stuffed pastas.

    Fettucini Pasta with Pork Sugo

Fettucini and Pork Sugo is one of my favorite pasta dishes.  I tend to make large batches of the pork sugo and store it in the freezer.  In this video, I’ll pulled some out and use it to dress some Fettucini.  I think this sauce goes awesome with long strand wide pastas like this.  You can either make your own, or obviously buy some
